Ambrosia

Every year a few weeks before Christmas, my mom, dad, brother and I would gather in the kichen to make ambrosia, some of which we would give away as Christmas presents.  Recently I started wondering why we only made this one time of the year when it was one of my favorite treats so I decided to make some!  There are many ways ambrosia can be made but we are traditionalist and have always stuck with what works....grapefruits, oranges, and pineapple.   

For this small batch I used one bag of grapefruits, one bag of oranges and 2 cans pineapple tidbits (in its own juices).  I started by slicing each of the grapefruits and oranges in half.
 This can be quite a messy process so I always make sure to have a towel under everything, otherwise you are going to end up with fruit juice all over your kitchen!

After I had everything set up I started sectioning the grapefruits, then moved onto the oranges.  Once they are sectioned it is time to sqeeze all the fruit and juice out of them scraping the sides of the grapefruits and oranges with a spoon to get all the juice.
After all of the grapefruits and oranges have been squeezed it is time to add the pineapple.  I added one can at a time, using two (20 oz.) cans of pineapple tidbits (including the juice).
Spoon into airtight containers and refrigerate!
This is a bit time consuming (this batch took me just under 45 minutes) and tedious, but completely worth it!  Serve for breakfast or as a fruit salad with lunch or dinner.
