A few years ago my aunt, Marguerite, and I were trying to come up with something new and different to have for an appetizer at a family get-together. Not that we don't love Fritos and Purity French Onion Dip, but we wanted something more. We dug through some of her recipes and found this one. I am not going to lie, I was a little skeptical at first as I tend to be when the word "mold" is in the directions of a dish, but I promised Marguerite I would try it. The first thing I loved about it was how inexpensive and easy this appetizer was to make, then I tried it and was absolutely blown away with how good it was. I have made this a few times since and every time I do people seem skeptical at first, just like I was, then they end up going back for more.
Cheese Ring Filled with Strawberry Preserves
1 pound shredded sharp cheddar cheese
1 cup chopped pecans
3/4 cup Hellman's Mayonnaise
1 medium onion, chopped
1 clove garlic, pressed
1/2 teaspoon Tabasco
Combine all ingredients.
Mix well and chill.
Mold into a ring and fill center with strawberry preserves.
Garnish with parsley and serve with Ritz Crackers.
