Tracy's Easy No-Bake Chocolate Oatmeal Cookies

It is a true gift to enjoy your work, but I believe the more important treasure is enjoying the people with whom you work.  I am a lucky individual to be able to honestly say that in my case, both scenarios are true.  I am blessed to call my co-workers friends!  One of those individuals is my friend, Tracy, who enjoys cooking as much as I do and is the best baker I have ever met!  A short while after I started my job in December 2009 Tracy brought these into the office and I immediatley fell in love....they are chocolate gooey bits of heaven!  My favorite part of this recipe is the original recipe which, like so many great recipes, is covered in chocolate marks and butter stains.  I find this the true sign of a good recipe...every cookbook and recipe card should have the battle scars of a working kitchen!

Tracy's Easy No-Bake Chocolate Oatmeal Cookies
1/2 cup peanut butter
2 2/3 cups uncooked quick oats
1 stick unsalted butter
1 3/4 cup sugar
1/4 cup cocoa
1/2 cup low fat milk
Pinch of salt
1 teaspoon vanilla extract
Wax paper

Measure peanut butter and oats, set aside.  Cut butter into 4 pieces and place in a 4 quart pan.  Add sugar, cocoa, salt and milk.  Raise heat to medium high.  Stir until well combined and stir frequently until the mixture comes to a boil, about 4 minutes.  Reduce heat to medium and boil mixture exactly 2 minutes, stirring constantly.  Remove pot from heat and stir in peanut butter and vanilla until completely incorporated.   
Stir in the oats until well mixed.  Place 2 sheets of wax paper about 18 inches long on the counter.  Use a cookie dough scoop or a heaping tablespoon to drop the cookie mix onto the wax paper.  Let stand at room temperature until firm -- about 30 minutes.
