Wild Mushroom Risotto


This recipe is something that Dad found that is pretty incredible!  It is a great side to most any dish and is definitely a family favorite for us!

Wild Mushroom Risotto
1 cup risotto
2 tablespoons olive oil
3 tablespoons butter
1 onion, chopped
1 package sliced mushrooms
1 box chicken broth
1/2 cup Parmesan Reggiano cheese, or to taste
Salt and pepper to taste

In a saucepan heat 2 tablespoons butter and olive oil.  In a separate saucepan warm the chicken broth so you are not adding in cool broth. Add risotto and onion and saute for 2 to 3 minutes.  Start adding chicken broth 1 cup at a time.  As the risotto starts to break down and thicken, add more chicken broth.  Repeat for 20 to 25 minutes, stirring constantly.  Add mushrooms and cheese (season with salt and pepper to taste).   Stir and add remaining tablespoon of butter.  Stir until well combined and serve.
