Baked Dijon Salmon


In an attempt to start eating healthier dinners I have decided to try lots of different recipes so that I may hopefully find new "week night favorites" that I will look forward to during the day like I used to look forward to a big bowl of pasta or a yummy loaded potato! I went on a search and found several recipes I will be posting over the next several weeks, but here is the first one I tried.... 

Baked Dijon Salmon
1/4 cup butter, melted
3 tablespoons Dijon mustard
1 1/2 tablespoons honey
1/4 cup dry bread crumbs
4 teaspoons chopped fresh parsley
4 (4 oz.) fillets of salmon
1 lemon for garnish 

Preheat oven to 400 degrees.  In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs and parsley. 
 Brush each salmon fillet lightly with honey mustard mixture, 
and sprinkle the tops of the fillets with the bread crumb mixture. 
Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. 
Season with salt and pepper, and garnish with a wedge of lemon. 
It turned out to be delicious! I served it with a small portion of whole wheat pasta lightly coated in homemade pesto and was completely satisfied with my meal!
