For me there is nothing greater of an indulgence as fettuccine alfredo. It is warm and hearty on a cold day and one of the best forms of comfort food when all you want to do it prop up your feet and sit on the couch. I have tried numerous recipes and just about every time I have thrown out a near full bowl for two reasons. One, it just didn't taste the way restaurant-style fettuccine alfredo does and second, why waste all those calories on something that doesn't really taste just the way I wanted it. Finally I came across a recipe that had an ingredient I had not seen in other recipes....cream cheese! How can anyone go wrong with cream cheese and, of course, that would be what would give it that delicious consistency! I also realized that when I am making something with so few ingredients the most important thing is to buy good ingredients and not skimp on such things as Parmesan cheese....
Here is the recipe that I adapted to my own taste that I found to be spot on! It is easy, simple, doesn't take any more time that cooking the pasta! ENJOY!!!
Fettuccine Alfredo
3/4 cup milk
1/2 cup butter
1 cup Parmesan cheese
8 oz. cream cheese, cut into bits
12 oz. fettuccine
In a large saucepan combine, cream cheese, Parmesan cheese, butter and milk, stirring constantly until smooth. Toss pasta in sauce, coating well. Leftovers will freeze well.
