Simple, quick and easy spring salad

I have never been a big fan of store bought salad dressings and to be honest the fastest way I have found to eliminate any healthy quality of a salad is to quickly douse it in fatty salad dressings. When I was in college my dear friend, Kris Dondero, showed me a way to make a delicious balsamic vinaigrette that I have been using ever since. It is quick and easy and is good on any salad I have tried!

Arugula Salad with Balsamic Vinaigrette

1 tablespoon Dijon mustard
2-3 tablespoons balsamic vinegar
1/4 cup olive oil
4 cups arugula
mozzarella cheese

 Combine mustard, vinegar and oil.  
Toss with the salad ingredients.
