Pimento Cheese Spread


As I was growing up I would constantly hear the name, Miss Dee.  She was not only the originator of so many wonderful recipes, but she was also accomplished in ceramics.  I never had the opportunity to get to know Miss Dee, but I am grateful for the opportunity to still have her recipes and to be able to keep the legacy of another lovely lady alive today!  This is a little different than your normal pimento cheese, but this, in my opinion, is the BEST!!  It is an absolute must for any tailgate or picnic!!

Pimento Cheese Spread (Miss Dee July 5, 1978)

½ lb. Cheddar cheese, mild 
1 can pimento, whole (small can) 
2 tablespoons flour 
3 tablespoons butter 
1 tablespoons salt 
½ tablespoons pepper 
1 tablespoons sugar 
1 tablespoons mustard 
1 tablespoons Worcestershire sauce 
3 tablespoons ketchup
1 tablespoon vinegar 
½ cup milk 

Make cream sauce with all the seasonings in a double boiler.  Grind cheese and pimento and stir into sauce over double boiler. Heat to melt cheese. Cool for at least an hour in the refrigerator.

    I must try. I have the BIGGEST aversion to mayo.

  2. Jamie this absolutely does not have any mayo in it and is pretty delicious if I do say so myself! When you try it make sure to let it sit in the fridge for a while so that it firms up a bit. Serve cold! Enjoy!
