For all you tomato lovers out there, this recipe is for you!!! My friend, Jennifer, made these the other night as a part of the epic meal which she and her husband made including beef wellington, corn souffle and a raw kale salad....A-MAZING!!
Baked Tomatoes
Notably Nashville

4 firm tomatoes
1/4 cup grated parmesan cheese
1/4 cup mayonnaise
chopped green onions to taste
chopped parsley (optional)
paprika (optional)
Cut the tomatoes into halves horizontally and cut a thin slice off the bottoms to help them stand.
Arrange on a baking dish.
Combine the parmesan cheese and mayonnaise in a mixing bowl and mix well.
Stir in the green onions.



Spread over the tomatoes and sprikle with the parsley and paprika.


Bake at 325 degrees for 8 to 12 minutes or just until the cheese begins to brown.
This sounds wonderful. My garden is just now producing tomatoes furiously. After an entire summer of fertilizing and no growth because of the heat, my 4 plants are exploding right now. I have more tomatoes than I have known what to do with!! Now I do... can't wait to try this!!
