Dark Chocolate Chip Comfort Cookies

 
I am a salt-craving kind of girl but every once in a while I have to have something sweet and when that craving hits there is only one thing that will quell this emotion....chocolate.  There are no two ways about it...I have to have chocolate and to be even more picky, I have to have dark chocolate.  Today, as I was taking my nephew and two dogs for a walk, that old familiar craving hit and we turned that stroller around, headed home, made our grocery list and headed on our way to get the fixings for these cookies.  Well it wasn't that immediate and dramatic, but I did think, while on our walk, that I was in the mood to bake something and these came to mind!  I followed the recipe almost exactly but ever since my best friend, Nicoll, first made her famous chocolate chip cookies with M&M's I now have to add them to ever chocolate chip cookie I make as well since they just add so much to the cookie....and not just because they are pretty!!

Dark Chocolate Chip Comfort Cookies

1 1/2 cups flour
1/2 cup cocoa
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, slightly softened
1 1/2 cups sugar
1/2 cup peanut butter
2 eggs
1 teaspoon vanilla
10 oz. dark chocolate chips
1/2 cup dark chocolate M&Ms
chopped pecans, optional

Preheat oven to 350 degrees.
In a small bowl, mix flour, cocoa, soda and salt using a wire whisk and set aside. Note: I have been told that when using flour to bake it is important to scoop your flour into the measuring cup as it allows the flour to reain fluffy and thus the cookies, cake, whatever, to rise exactly how it should.
 
 
In another bowl, cream butter, sugar and peanut butter until light and fluffy.
I just had to show this enormous bag of sugar Maggie and I bought while making jelly once...we clearly did not know how little we were going to use because not only are we still working on using up this bag of sugar, there is ANOTHER bag just as large (an unopened, I might add) in the pantry! 
When I am creaming butter I think it helps to cut it into small cubes first.

I took a picture of this simply because I find getting peanut butter into a measuring cup to be one of the most difficult tasks in the kitchen so since it turned out so neat I was proud.....and took a picture!


 
 
Add eggs and vanilla and mix until combined.
 
 
Add flour mixture to creamed mixture and mix until combined.

Stir in dark chocolate chips ( and dark chocolate M&Ms if you prefer).
 
Use a flat spatula like this one to fold in the chocolate chips and M&Ms
 
Roll cookie dough into 1-1/4 inch balls. (If desired, roll balls in chopped pecans.)

Place on parchment paper covered baking sheet.
 
Bake 10 minutes.

Place cookies on cookie rack to cool.
Makes about 30 2-inch cookies.
Best served with a side of ice cream and chocolate syrup!
 

For the record, the cooking time is completely dependent on the oven you are using so keep an eye on your cookies....clearly I did NOT do this on the first batch as they all burned on the bottom and ended up in the trash!
