When I saw this recipe on www.closetcooking.com I knew I had to make it the next time I had people over, so what did I do? I planned to have people over immediately! Not sure if you have noticed this or not but I can be rather impulsive when it comes to trying new recipes. When I find it I want to cook it! I don't want to wait until the weekend, I don't want to hang on to the recipe until the next holiday, I want to have people over THAT NIGHT and try what I am certain is my new found treasure! That is how I felt about this recipe. The good ole Reuben sandwich is one of my personal favorites so then someone went and combined it into a dip....sheer genius!!! There would be nothing better than eating my favorite sammie with a salty chip or cracker! Well here it is my friend, a must-have, must-try, sure-fire recipe that you and your guests will be craving long after you have scrapped the bottom of the dish!
Reuben Dip
1 cup corned beef (diced)
1/2 cup sauerkraut (squeezed and drained)
1/2 cup Swiss cheese (shredded)
8 ounces cream cheese (room temperature)
1/2 cup thousand islands dressing


Mix everything in a large bowl.
Pour the mixture into a baking dish.
Bake in a preheated 350F oven until bubbling on the sides and golden brown on top, about 20 minutes.
