Sock It To Me Cake

 
 
Every year for as long as I can remember my mom has made this coffee cake for Christmas morning.  It wasn't until this year that the light bulb went off in my head and I realized it would be delicious all year long!  It is a beautiful treat once completed, though mom swears that one year she made it with the icing and "we didn't like it....it was too sweet", which in "mom-lingo" means she's the one cooking, she didn't like it, so we won't be having it with icing ever again.  

Clearly you see where I get the mentality that I am not a short-order cook so if you don't like it the way I make it then I am real sorry, but that's the only way it's hitting the table!  

In all honesty this coffee cake really doesn't need it, as it is already packed full of delicious flavors, but just in case you come from an icing loving family, I have included it in the recipe!

Sock It To Me Cake

1 package Duncan Hines Butter Recipe Golden Cake Mix
1 cup sour cream
1/2 cup vegetable oil
1/4 cup sugar
1.4 water
4 eggs

Filling:
1 cup pecans, chopped
2 tablespoons brown sugar
2 teaspoons cinnamon
Preheat oven to 375 degrees.  In a large bowl, mix cake mix, sour cream, oil, water, eggs and sugar.  Beat on high for 2 minutes.  Pour 2/3 of the batter into a greased and flour tube pan.  
 
 
Combine filling ingredients and sprinkle over batter in pan.  
 
 
Spread remaining batter evenly over filling mixture.  
 
Bake at 375 degrees for 45 to 55 minutes until cake springs back when touched lightly.  Cool right side up for about 25 minutes then remove from pan.
Glaze:
Blend 1 cup confectioner sugar with 2 tablespoons milk.  Drizzle over cake.

This is my sweet Richard....he was born on my 24th birthday and is such an angel!  He also happens to be one of Annie's most favorite people in the whole world!
On Christmas morning this is how I found Annie under my parents Christmas tree....clearly the holidays had already worn her out!
Emory was a walking machine on Christmas Day, showing off all his mad skillz to the rest of the family!
