Tuscan Pasta with Tomatoes-Basil Cream Sauce

Every once in a while a couple friends and I get together, cook dinner, drink wine and get caught up on what is going on in each other lives which usually leads to giggling, gasps of astonishment, possibly too many empty bottles of wine, but always a good time had by all! 


The way we decide what we are having is my favorite process....I email each of them around 5 different options from recipes I have either pinned on Pinterest as something I want to try or a recipe I have saved as a draft in hopes to one day make. From those choices they tell me their top three and we see which overlaps and go with that option. Sometimes it works, sometimes it doesn't and I just decide (as the tie breaking vote of course) but either way the company is the lead actor and the meal is simply the supporting cast! Last week this was the blue ribbon winner for our dinner and it was delicious!!!


Tuscan Pasta with Tomato-Basil Sauce


1 (20-oz.) package refrigerated four-cheese ravioli*
1 sun-dried tomato Alfredo sauce *
2 tablespoons white wine
2 medium-size fresh tomatoes, chopped
1/2 cup chopped fresh basil
1/3 cup grated Parmesan cheese
Garnish: fresh basil strips

Prepare pasta according to package directions.
Meanwhile, prepare the Alfredo sauce into a medium saucepan. 

Pour wine into sauce. Stir wine mixture until combined. Stir in chopped tomatoes and 1/2 cup chopped basil, and cook over medium-low heat 5 minutes or until thoroughly heated. Toss with pasta, and top evenly with 1/3 cup grated Parmesan cheese. Garnish, if desired.


* Sun Dried Tomato Alfredo Sauce

1 cup heavy cream
3 tablespoons butter
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese 
1/4 cup chopped sun-dried tomatoes
salt and pepper to taste
1 tablespoon pine nuts

Heat the cream and butter in a saucepan over medium heat until almost boiling, but do not boil. 
 
Add mozzarella and Parmesan cheeses, and stir until melted. 
 
Stir in the sun-dried tomatoes, and season with salt and pepper. 
 
Remove from heat and serve over pasta with a sprinkling of pine nuts (if desired).  Add mozzarella and Parmesan cheeses, and stir until melted. Stir in the sun-dried tomatoes, and season with salt and pepper. 
 
Remove from heat and serve over pasta with a sprinkling of pine nuts.
