Chocolate Covered Strawberries

 
To me there is simply nothing better than dark chocolate....I think I might even love it more than I love pasta or pizza and that is saying a TON!!!  Combine that love with my sheer delight at the mere mention of fresh fruit and my knees melt!  

This is absolutely my favorite dessert....one I can even convince myself to pay $4 for one strawberry dipped in some chocolate at any little dessert shop even though I realize I can purchase all of the ingredients for just about the same price!

If you are in the market for the easiest dessert you can possibly make that will knock the socks off your Valentine, just give this a shot....If I could have these for breakfast every morning I might be the happiest girl in the world!

Dark Chocolate Covered Strawberries

10 oz. dark chocolate chunks
8 oz. semi-sweet chocolate
2 tablespoons shortening
2 packages fresh strawberries
 
Bring a half full pot of water to a low boil and place a glass bowl on top to make a double boiler.  Dump chocolate and shortening in and stir occasionally until it melts completely.  
 
You want the chocolate smooth.
 
Dip each strawberry in the chocolate and lay on a baking sheet lined with wax paper or parchment paper.
 
Place in the refrigerator for an hour or so to cause the chocolate to harden.
