Mozzarella Sandwich

When it comes to mozzarella cheese there are not many ways I won't eat it!  Fresh with tomatoes and basil, melted on top of a homemade pizza, it doesn't matter...I am going to love it!  This sandwich was no different!  With pesto still in the freezer from the hoards of it I made this summer and a fresh batch of olive tapenade in the fridge, it just seemed like a light, fresh and easy meal to have on your basic Tuesday night!

Mozzarella Sandwiches
Ciabatta Bread
Fresh Mozzarella
Slice bread in half.  
On one half spread the pesto and on the other spread a thick layer of the olive tapenade. 
Place several thick slices of mozzarella cheese in between.  
Cut in half diagonally (because how else would you do that) and chow down!

When the tomatoes are good in the summer place a few slices of tomatoes on it and some fresh basil....YUM!
