Krispie Cheese Wafers

Not sure if these are simply a Nashville thing or if they are a favorite across the Southeast, but it wasn't until I came home that I truly fell in love with the delicious cheese wafer. I knew of them of course and knew that so many people absolutely loved them but I was indifferent....they didn't seem to be anything special to me. Oh how I was mistaken....mislead....misdirected!!! They are like a little piece of heaven with the most delicious spicy after bite!

The more I had the more I knew I absolutely MUST learn how to make them. To be able to have them whenever I want is legitimately dangerous, I understand this, but it is a risk I am simply willing to take!!

Crispy Cheese Wafers
as adapted from Encore! The Junior League of Nashville Cookbook

2 (2 cup) packages shredded sharp cheddar cheese (regular, not finely grated)
1 cup butter, softened
1 teaspoon salt
1/2 teaspoon cayenne pepper
2 cups flour
2 cups rice cereal
1 cup chopped pecans (optional)
Combine all ingredients except cereal and pecans by hand or in a mixer. 
Blend in cereal and pecans by hand. 
Form into 1-inch balls and press down with a fork. I rolled them into a ball first and then smushed them down a little before pressing them with the fork. This helps to keep the edges from cracking.
      
Bake at 350 degrees for 20 to 25 minutes. 
Yields 5 dozen wafers. Store in an airtight container until ready to serve.
We made these for a baby shower and here are some of the darling decorations!!
