Easy Turkey Taco Salad

I remember the first time I made this and my friend who was eating with me must have said 4 or 5 times throughout the meal how he couldn't believe how easy and how delicious these were.  He was right!  They are painfully easy and always hit the spot!

For the longest time dishes such as these have not seemed complex or involved enough for me to include on the blog but then I realized that while I love spending an afternoon in the kitchen cooking a 5 course meal, sometimes there is nothing better than having one of my favorite meals ready within 20 minutes of walking in the door from the grocery.  So, here it is!  This is definitely a staple in my menu planning arsenal and I hope you enjoy this relatively healthy mid-week option!

Easy Turkey Taco Salad
1 pound ground turkey
1/4 cup taco seasoning (you can try my homemade recipe or just use the store bought kind...I find that it is cheaper to make a large batch at home and store in an airtight container but you can do whatever is most convenient for you)
2/3 cup water
iceberg lettuce
extra sharp cheddar cheese, grated
diced tomatoes

In a saucepan, brown the turkey.  You can also use ground beef but I find that it is a little lighter with the turkey.  (If you use ground beef you will need to drain off the fat once it is browned before adding the taco seasoning and water)  
 
Once the meat is cooked add the water and then stir in the taco seasoning.  
   
Turn the heat to lo and allow to simmer until the liquid has been absorbed.  Serve over a bed of lettuce and top with cheese and tomatoes.  It is also delicious to top with black beans, sour cream and chives!
