Penne Pasta with Sun-Dried Tomato Cream Sauce

Mistake #1: Deciding to have pasta for dinner instead of grilled chicken and a salad

Mistake #2: Cooking said pasta as the recipe calls without cutting it in half

Mistake #3: Being left alone to eat as much of this deliciousness as I deem fit.....DANGER!!!  DANGER!!!

I am going to assume that this recipe was meant to be a side to some full course meal, filled with proteins, green vegetables and maybe even a side of some delicious garlic bread.  I, on the other hand, decided to make it my only dish in a dinner fit for the gods!!  While my heart and my belly were thrilled with this decision, my waistline could have done without.....that is why we exercise though right, to be able to eat (and drink) what we want!!  Here is to a great side, maybe a great entree, but a heavenly dish nonetheless....CHEERS!

Penne Pasta with Sun-Dried Tomato Cream Sauce
as adapted from

2 cups (8 oz.) dry penne pasta
8 sun-dried tomatoes, chopped (about 1/3 cup)
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
2 cups (8-oz. pkg.) shredded Italian-style four-cheese blend
1 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
Prepare pasta according to package directions, adding sun-dried tomatoes to boiling pasta water for last two 
Meanwhile combine evaporated milk, cheese, basil, garlic powder and pepper in medium saucepan. Cook over medium-low heat, stirring occasionally, until cheese is melted. Remove from heat.
Add pasta and sun-dried tomatoes to cheese sauce; stir until combined.
Then the angel start to sing and we are ready to dive right on in!
