Tomato, Olive, and Mozzarella Salad with Dijon Vinaigrette

Shut the front door....I have found another way to combine my favorite summer ingredients and pawn it off as a new recipe.  Well it is, sort of....The standard players are still present...homegrown tomatoes....check!  Fresh mozzarella....well of course!  Basil picked from the back porch....why not!  Throw in some olives and a homemade dressing and you have brought this produce-junky to her knees!

This time of year I am such a sucker for anything that has locally grown tomatoes, mozzarella, and basil, but to throw olives in there is just icing on the cake for this girl.  I love the combinations of the salty olives, the sweet basil, creamy cheese and tangy dressing....true perfection!  The standard caprese salad is already a favorite in my family but this might just be the twist we needed to make an old favorite new again!


Tomato, Olive, and Mozzarella Salad with Dijon Vinaigrette

1 can large black olives, cut in half (6 oz. olives after draining)
3 cups cherry tomatoes, cut in half
1 cup fresh mozzarella pearls, cut in half (or use regular fresh mozzarella and cut into pieces
1/2 cup vinaigrette dressing (I used my homemade dijon vinaigrette, but any type of homemade or bottled vinaigrette that you like will work. A good choice would beNewman's Own Olive Oil and Vinegar Dressing, which is widely available and has only 1 gram of sugar.)
1/2 cup chopped or torn fresh basil leaves
salt and fresh ground black pepper to taste
Drain olives and fresh mozzarella pearls while you cut cherry tomatoes in half; place tomatoes in bowl. Cut olives and mozzarella pearls in half and put in bowl with tomatoes.

Wash basil and spin dry in salad spinner or dry with paper towels, then chop or tear basil into small pieces. Mix chopped basil into vinaigrette dressing, then gently combine dressing with the tomato mixture. Season to taste with fresh ground black pepper and serve immediately.
