Maggie's White Chili


I saw it!  I really truly did!  I SAW A LEAF TURNING COLORS!!!!  You know what that means.....break out the jeans, throw on a sweater, snuggle down with your Uggs because Fall is upon us!!!

I absolutely LOVE fall!  What is not to love...the heat of the summer is behind you, the holidays are just around the corner, the fall food is basically amazing and let's be honest, it is football season and where I come from that is higher on the list of "holidays" than Thanksgiving!

Recently some friends and I went to the mountains of Tennessee for a much needed girls trip.  It was exactly what we wanted: relaxation, board games, tons of playing cards and a few bottles (ok you got me, they were boxes) of wine plus some margaritas thrown in for good measure.

Heaven, simply heaven I tell you!

We sat in the river like good little rednecks, we walked around getting the know the scenery which surrounded us, we even made a new friend, Tracker, who hit jackpot when he ran into this dog-loving group of ladies!  

Before the trip we had planned out the food as we are notorious for bringing WAY too much and by too much I am not talking about a bag of chips left over, I am talking about enough food to feed the Eastern seaboard for a week....you get the point.

Anyway, we planned it all out....each person was going to basically contribute one meal or snacks.  Here is where I really got excited....Maggie threw in the crockpot to make her delicious white chili.....that's right, the crockpot!!!  This can only mean one thing.....IT IS FALLLLLLLL!!!!!!!  On top of this fabulous season having arrived it also means that chilis, soups and stews will no longer be too hot to eat because of the exhausting heat outside!  

If you can't tell I love this weather, I love to bundle up, I would much rather be snugged under a blanket than sweating on a safari (well I will take the safari but maybe at a comfortable 72 degrees)....I even (close your eyes Nicoll) slept in socks!  It was my personal version of happiness.  From the chili to the attire, I was in my own little happy place.  Here is a glimpse into our food and our fabulous time in the mountains!

Maggie's White Chili
1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
2 (4 ounce) cans diced green chilis
1 can Ro-Tel
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans**
1 cup shredded Monterey Jack cheese
sour cream
**Maggie likes to use several different kinds of white beans to get all the different textures but you can use whatever kind of white bean you prefer but I must say her version is pretty delicious!

Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender.
  
Mix in the garlic, green chile peppers, cumin, oregano and cayenne.
In a large crockpot, pour the onion mixture and then add the beans and Ro-Tel.

Lay the chicken breasts on top of the beans and pour in the chicken broth.
 


Cook on high for 3-4 hours or on low for 6-8 hours.  About 30 minutes before cooking (or whenever you feel like it and the chicken is fork tender) take two forks and pull apart the chicken breasts.  Add them back to the soup and continue cooking.  This will keep the chicken from drying out.

Serve with pepperjack cheese, sour cream and, of course, fri

  1. In case you are feeling lazy or don't want to dirty up another pan, which is often the case for me,I've had success throwing everything in the crockpot without cooking the onion, garlic and chilis first! Just a little FYI!!
