Taco Pasta

So I saw this recipe and literally sent it to my friend in an email titled "Gross or totes delish?"

Even I was skeptical....this might be pushing the limit on recipes I would try, but then I though that I had to be fair and if I had a captive audience then I would give it a shot.

The more I got to thinking about it I was basically getting ready to make my own hamburger helper, just with a taco twist!

We gambled and we won!

It really was tasty and certainly fit into the "budget friendly" category which is always an enormous plus for me!

Taco Pasta
as adapted from

1 pound of large noodle pasta like ziti
approx. 1lb of ground beef
1 onion, diced
3 cloves garlic, minced
1 pkg/envelope of taco seasoning (or 1/4 cup homemade taco seasoning)
1cup water
8 oz. of cream cheese
1 1/2C shredded cheese (I used sharp cheddar and pepperjack) 

Boil pasta until just cooked, drain, run cold water over it.  Brown ground beef with garlic and onion.  
Mix together taco season and water, pour over cooked beef and let simmer for about 15 minutes until the liquid has reduced.  
Add the cream cheese to the beef mixture, stir until melted and combined, remove from heat.  
Put pasta in your casserole dish or pot, mix in 1C of the shredded cheese.  
Top pasta and cheese with beef mixture, gently mix until the pasta is coated.  
Top with remaining 1/2C of shredded cheese.  
Bake at 350 uncovered for approx 30 minutes


Just to be fair (again) we had to take pictures of multiple peoples plates...they were all licked clean after we ate!
